On the project

Allyl isothiocyanate (AITC) has been recognized as a promising agent for active packaging due to its antibacterial and antioxidant properties. However, the application of AITC in biofilms is hindered by its high volatility and unpleasant odor. The encapsulation by chitosan nanoparticles can overcome the above limitations. This project aims to integrate AITC-loaded chitosan nanoparticles into chitosan/zein bilayer films which is expected to be safe, highly antibacterial, waterproof, and significantly enhance the quality of packed poultry meat.
