Original Abstract

The aim of this study is to compare results obtained from histological and chemical examinations of different kinds of mechanically recovered meat, focusing mainly on the contents of muscle tissue, fat, collagen, connective tissue an bone fragments, and develop a proccedure suitable for the processing and evaluation of a representative set of samples.
